Agree what the replacement means before touching the bill

Use a supervised training order with two dosa at fictional Rs.80 each and one coffee at Rs.25. Its item subtotal is Rs.185 before any configured adjustments. Represent the dishes with paper cards rather than preparing or discarding food for the exercise. A colleague playing the guest asks for one dosa to be replaced. The authorised person agrees to the same dish at no extra charge. Record that decision and the original order reference.

Tell the kitchen exactly what fresh work is required

The cook needs to prepare one replacement dosa, not repeat the original two dosa and coffee. Have the captain explain the reason, original reference and quantity through the restaurant’s agreed process. Ask the demonstrator how that instruction is recorded in the supported setup. This page does not claim a dedicated replacement button or automatic remake ticket. If a separate kitchen instruction is needed, show how staff distinguish it from an additional customer order.

Keep the original sale and replacement record traceable

Ask the cashier to show the supported treatment of an authorised no-charge replacement. Do not silently add a third billable dosa or remove an original dish merely to make a new ticket print. If the installation uses a different correction procedure, follow it with the authorised person and inspect both the old and current records. A replacement, a complimentary extra and a cancellation are different business decisions; agree which one this example represents.

Reconcile preparation quantity separately from billable quantity

Complete the handoff and review the exception

Have another captain identify the intended table and guest before handing over the replacement card. Check that the coffee and the other guest’s dosa are not prepared again. Record who approved the replacement, who acknowledged it in the kitchen and whether the original bill was already settled. For a paid bill, this example calls for no additional customer charge; it does not imply a refund. At shift handover, another staff member should be able to explain the exception from the agreed records without relying on the first captain’s memory.
