Agree who can confirm the remaining portions
Choose one dish for a supervised practice session and ask the kitchen representative to declare that only one portion remains available. Use a written training note rather than altering live stock. Decide who can confirm or change that number and how the counter and captain contact that person. Rehearse two requests for the same last portion

Ask the demonstrator to show the supported way to change availability in your intended setup. If a separate sold-out board or staff message is part of the process, include it in the test. Check the cashier’s view and the captain’s actual phone, including a menu screen that was already open. Have each operator explain what they would do if the device still shows an old choice. Record whether a refresh or another supported step is needed; do not rely on a verbal assurance that all screens update.
Resolve the affected order with the guest’s agreement
For practice order B, use a fictional guest who chooses a different dish after being told the first is unavailable. Demonstrate the supported order correction and the corresponding kitchen instruction before preparation. Review the new dish, quantity and price on the final bill. If your normal workflow takes payment earlier, ask to see the applicable adjustment procedure separately; this guide does not promise automatic refunds or a payment-provider integration.
