Separate packing a served dish from ordering a fresh parcel

Begin with two portions already served

Use a supervised practice table with two portions of vegetable fried rice entered and served. Use a fictional menu price of Rs.150 per portion, giving an item subtotal of Rs.300. Mark the exercise as training and use empty containers or written dish cards. The guest then asks to pack the remaining food from one served portion. That request changes the handoff, not the number of portions originally ordered. Agree how the captain communicates it without creating a second preparation instruction.

Confirm whether the guest wants existing food or fresh food

Have the captain repeat the request: pack food from the table, prepare one new portion, or do both. In this rehearsal the guest wants both. Ask the demonstrator to show the supported way to enter the one additional portion and convey that it is for takeaway. If a separate packing note is needed, include it in the test. This exercise does not assume an automatic dine-in conversion, a special leftover-packing module or a particular order-note feature.

Ask the kitchen to identify only the new preparation

The cook should receive an instruction for one fresh portion, with the correct order reference. The remaining food at the table is not a request to cook another portion. Ask the kitchen operator and packing operator to explain their tasks separately. Follow your restaurant’s own handling procedure for food returned from the dining area; the billing demonstration does not establish food-handling suitability. Keep the existing-food packing request from being mistaken for a new kitchen ticket.

Check three billed portions against two packing tasks

The final ordered quantity is three portions: two served plus one newly ordered. At the fictional Rs.150 price, the item subtotal is Rs.450. A subtotal of Rs.600 would mean a fourth portion has been charged; Rs.300 would omit the new portion. Review taxes, discounts and any applicable packaging charge separately using your actual menu and policy. Packing the remainder and packing a fresh portion are two tasks, but they do not add two newly sold portions. Ask the cashier to explain each bill line before completing the exercise.

Finish with a handoff another staff member can understand

Ask a second operator to match the table reference, the newly prepared parcel and the existing-food packing request. Confirm that the guest receives what was agreed and that neither task is silently left for the next shift. If the guest changes their mind about the new portion, demonstrate the supported correction and kitchen acknowledgement rather than deleting it without checking preparation.
