Keep two versions of the same dish clear to the kitchen

The Directorate of Town Panchayat’s Chitlapakkam profile identifies Chitlapakkam Lake and notes that Chitlapakkam and Sithalapakkam are frequently confused. Start with two guests and one dish name

Choose a dish from your own menu for a supervised test. For example, guest A requests one vegetable fried rice without onion, while guest B requests one with the usual preparation. Confirm that the kitchen can accept the preference before promising it. Write the two requests on separate training cards so there is an independent reference. There are two portions in total, but the preparation instructions are different.

Demonstrate how the order preserves the distinction

Ask the captain to enter both requests using the supported item-note or order-entry process. Inspect the saved order before sending it to the kitchen. If the software combines identical items into one quantity, show how staff can still tell which portion has the preference. If the required distinction cannot be represented clearly in the chosen setup, record that as an unresolved requirement and agree the staff communication process before using it during service.

Read the note at the actual preparation point

Check the printed KOT or kitchen display used by your team. Ask the cook, without prompting, how many portions to prepare and which one differs. Include a longer note and inspect what is actually visible on paper or screen; do not assume that every character entered remains readable in every layout. Change one portion without changing the other

In the training scenario, guest A changes the preference before preparation begins. Have the captain update only that request and have the cook acknowledge the current instruction. Guest B’s regular portion should remain unchanged. The expected final quantity is still two, not three or four. Review the running order and any replacement or additional kitchen instruction together, so an edited note does not silently become a second cooking request.

Check the bill and the serving handoff separately

Use a fictional price of Rs.120 for each portion. With no separately agreed extras in this exercise, the item subtotal is Rs.240. Review configured taxes and other adjustments separately. The bill confirms quantities and prices; it does not by itself identify which guest receives which preparation. Have another staff member explain the table and guest distinction at handoff.
